Start licking your chops!!!

We are still scrambling away trying to get our new place up and running so that we all can start to enjoy the wonderful Latin cuisine which we have perfected over the last 10 years in our Coopersburg location in Lehigh County. 

Our building progress seems to have been slow, but I am sure you all can appreciate delays that happen when building something new.  Township snags, supply back logs, you name it -- we’ve had it happen! BUT the anticipation of having our new Casa Toro in beautiful Bucks County and knowing we will be meeting many new friends and seeing old colleagues more often just excites us even more so.  I will be adding interior pics soon!  We are going to have the most magnificent bar in the area -- a great local hangout soon to be a favorite of many. 

When anticipating this you cannot help but to think of the aromas that will be filling our establishment soon.  Hot sizzling fajitas, smokey roasted pablanos, icy fresh hand squeezed margaritas.  Yummm…
This holiday season up in Coopersburg, one of our amazing chefs created a …..  

CHILE EN NOGADA
Roasted poblano pepper stuffed with a picadillo mix containing ground beef, onion, bell peppers, & pomegranate arils, topped with a creamy walnut sauce, & sprinkled with fresh cilantro & pomegranate arils. Served with white rice & a side salad.

 
This dish is now my favorite.  This blend of unique flavors just wants you to come back for more and more, but we have to watch the waistline.  A huge roasted Poblano pepper stuffed with piccadillo, a ground meat concoction simmered for hours with a blend of onions, garlic, and tomatoes and then covered with a warm creamy walnut sauce and sprinkled with the sweet yet tart pomegranate arils.  So, so yummy.

Then compliment that with a festive “GRINCH MARGARITA.” Margaritaville Silver tequila, triple sec, Midori Melon liqueur & our house made lime mix, served on the rocks, with a red sprinkle rim.


Or, want a taste of the sea? Try our award winning CEVICHE.  Fresh seafood cocktail made with shrimp, scallops & tilapia, in a citrus tomato sauce.  Garnished with cilantro & an avocado slice, served with house made corn tortilla chips.


Our AVOCADO SALAD is delicious and pretty to look at! Sliced whole avocado over crisp Romaine lettuce topped with pico de gallo and cilantro. Add Chicken, Steak or Shrimp to make it even better!


Our FRIED AVOCADO is a local fav!!  Whole fresh avocado stuffed with melted cheese and ground beef OR veggies and cheese and lightly fried to perfection.  Served with red sauce, pico de gallo, and house made corn chips.


OK – I better go out and do some running or maybe just go back to the job site and check on our progress.  Can’t wait to see you all soon!
